If you like store bought Oreos then you are going to love these soft homemade Oreo cookies. They are really easy to make. Even if you aren’t a baker…….you can’t go wrong with these.
When I was about ten years old my aunt brought some of these cookies to a family reunion. I have always liked store bought Oreos and when I had these for the first time I was instantly hooked.
How to Make Soft Homemade Oreo Cookies
Begin by preheating your oven to 350°
Add the contents of two Devil’s Food cake mixes to a large mixing bowl. Then, add 4 eggs and 1 1/2 cups of shortening.
Combine these ingredients together. I like to mix these by hand rather than use my stand mixer because the dough becomes very thick.
Once the ingredients are thoroughly combined, use a small cookie dough scoop or just eye-ball it like I do and form some of the dough into a ball. Space each ball of dough on a cookie sheet and lightly press down.
Bake in a 350° oven for 9 – 11 minutes.
Once the cookies are baked remove them from the oven and allow to sit on the baking sheet for one to two minutes before removing to a cooling rack. Cool completely.
Cream Filling
Cream together 1 stick of room temperature butter and 8 oz. of cream cheese. Add two cups of powdered sugar and 1 tsp of vanilla.
Spread the cream filling onto the flat side of one of the cooled cookies. Place another cookie that is the same size on top. Continue this process until all of the cookies are filled.
Tips
- Sift the cake mix before adding the eggs and shortening. This will insure your dough is smooth and without lumps
- If you forget to get your butter and cream cheese out of the fridge in enough time to let it get to room temperature place one at a time on a microwave safe plate. Heat in 10 second intervals and then rotate the butter or cream cheese until it becomes soft but not melted.
