These coconut macaroons with chocolate are quick and simple to make and taste delicious. With shredded coconut, sweet and condensed milk, and melted milk chocolate theses coconut macaroons are a great one to make when you don’t have much time but need a quick desert.

This is a recipe I got from a good friend. We were having dinner together and Meg brought the ingredients to make these coconut macaroons. Just the smell of them baking was amazing but then adding some milk chocolate and biting into one of these……….delicious.
Step-by-Step instructions

In a medium sized bowl add the coconut, flour, and salt. Combine the dry ingredients. Add the sweet and condensed milk along with the vanilla and mix the the ingredients together until well combined.

Next, drop small mounds of the dough onto a parchment lined cookie sheet and gently press down to lightly flatten it out.
Place in a 350° F preheated oven of 13 minutes.

Place on a cooling rack and allow to cool completely before adding the chocolate.

In a microwave safe bowl add the chocolate chips. Heat up for 30 seconds and then stir. Repeat until the chocolate is melted.
Place the melted chocolate in a small baggie and cut one of the corners off.

Squeeze out the chocolate onto the cookies. Allow enough time for the chocolate to cool and set-up or enjoy immediately.


Tips For Coconut Macaroons with Chocolate
- This is a very thick dough. It is easier to mix by hand or with a strong wooden spoon.
- After placing the dough on the parchment paper, I like to press down the dough to flatten it out a bit.
- When melting the chocolate, heat in short intervals and stir well in between. Be careful to not over heat the chocolate because then it will seize up and turn crumbly.

Equipment
- medium sized mixing bowl

Ingredients
- 5½ cups shredded coconut
- ⅔ cup flour
- ¼ tsp salt
- 1 can sweet & condensed milk
- 2 tsp vanilla
Instructions
- Preheat oven to 350° F
- Add the dry ingredients to the medium sized mixing bowl and stir to combine
- Add the sweet & condensed milk and the vanilla. Stir to combine
- Drop small mounds of dough (approx 1 Tbs) on to parchment covered cookie sheet. Softly press dough to flatten it a bit.
- Place in oven and bake for 13 minutes
- Remove from baking sheet and place on a cooling rack.
- Melt chocolate in the microwave for 30 second intervals, stirring well in between.
- Place the melted chocolate into a small baggie. Cut one of the corners off of the bag. Squeeze chocolate onto coconut macaroons.
