Preheat oven to 350° F
Add the dry ingredients to the medium sized mixing bowl and stir to combine
Add the sweet & condensed milk and the vanilla. Stir to combine
Drop small mounds of dough (approx 1 Tbs) on to parchment covered cookie sheet. Softly press dough to flatten it a bit.
Place in oven and bake for 13 minutes
Remove from baking sheet and place on a cooling rack.
Melt chocolate in the microwave for 30 second intervals, stirring well in between.
Place the melted chocolate into a small baggie. Cut one of the corners off of the bag. Squeeze chocolate onto coconut macaroons.
