Healthy Homemade Granola

My family and I love this healthy homemade granola recipe. Growing up my mom often made granola. It was crunchy and sweet and made the house smell amazing whenever she made it.

After I got married and had kids of my own I started making her homemade granola but with a few changes.

Instead of brown sugar I started using honey and I switched out the vegetable oil for coconut oil. I also added more nuts and some flax seeds. This healthier version of mom’s homemade granola is still just as delicious.

My kids love to eat this healthy homemade granola with yogurt and berries as an after school snack.

Or for breakfast with milk instead of cereal loaded with sugar. Though let’s be honest there are times when that’s what makes it onto the table!

Step-By-Step Instructions

Begin by adding 8 cups of old fashioned oats to a large mixing bowl.

Next, add 3 cups of shredded coconut. ( When I have it I use unsweetened…….and when I don’t I use the regular sweetened coconut)

Followed by 1 1/3 cups of sliced almonds, 3/4 cup chopped pecans, 4 cups of bran cereal, and 3 Tb. of flax seeds.

Stir these ingredients together until well combined.

In a medium sized sauce pan combine 1 1/3 cup of honey and 3/4 cup coconut oil. Set over medium heat and bring to a boil for 1 minute.

Remove the pan from the heat and stir in 1 tsp of vanilla extract and 1 tsp of almond extract.

Finally pour the heated mixture over the dry ingredients and stir until it is well coated.

Baking Homemade Granola

Divide the granola between two large baking sheets lined with parchment paper and place in a preheated 325° F oven. Bake for 12 minutes before stirring each pan and rotating pan placement in the oven and then bake for another 12 minutes.

Finally, carefully remove the baked granola from the oven transfer to a large bowl. While the granola is cooling stir it often to prevent it from cooling into one big piece.

Healthy Homemade Granola

This homemade granola recipe tastes delicious and is good for you. Lightly coated with honey and coconut oil, it is sweet and crunchy and is great by itself, with milk and fresh fruit, or sprinkled on top of yogurt.

Ingredients
  

  • 8 cups old fashioned oats
  • 3 cup unsweetened shredded coconut
  • 1 ⅓ cup sliced almonds
  • ¾ cup chopped pecans
  • 2 Tbs flax seeds
  • 4 cups bran cereal
  • 1 ⅓ cup honey
  • ¾ cup coconut oil
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • pinch salt

Instructions
 

  • Preheat oven to 325° F
  • Add oats, coconut, almonds, pecans, flax seed, and bran cereal to a large bowl and mix together
  • In a medium sized saucepan add the honey and coconut oil and bring to a boil over medium heat.
  • Allow the mixture to boil for 1 minute and then remove from heat.
  • Stir into honey and coconut mixture the almond extract, vanilla extract, and a pinch of salt.
  • Carefully pour over the dry ingredients and stir until it is all well coated.
  • On two baking pans lined with parchment spread the coated granola evenly between the two pans
  • Place in a 325° F oven and bake for 25-30 minutes rotating baking pans and stirring granola half way through the baking time.
  • Remove from the oven and transfer the granola to a large bowl. As it cools stir often.
